Mommy's Milk - A Poem
when your life first began.
That's not how I'd envisioned starting things,
but we made ourselves a new plan.
And so it began,
our Mommy's milk journey.
We began to figure things out,
as we forged ahead ever so slowly.
When you finally came home,
you still couldn't nurse from me.
You were just too small,
you couldn't spare the energy.
You grew and grew,
and then you learned how.
It still wasn't easy,
not even now.
I started to nurse,
with both of you right there.
But you wouldn't stay,
you had no patience to share.
The road started off rough and slow,
but then flew by rapidly.
As day after day and month after month,
you snuggled up to nurse happily.
Then just as slowly as you began,
you started to be done.
As you began to drop feedings,
one by one.
That brings us to the present,
this journey is over for us today.
At times I thought I'd be ready,
but now, after 18 months, this is so sad for me to say.
I was blessed to have those times,
to share in those moments with you.
Thank you my healthy little ladies,
thank you my precious two.

Tex-Mex Chili with Dumplings
1/3 cup all-purpose flour
1/3 cup yellow cornmeal
1 teaspoon baking powder
1/4 teaspoon salt
1 beaten egg white
1/4 cup fat-free milk
2 tablesppons cooking oil
3/4 cup water
1 cup chopped onion
1 clove garlic, minced
1 15-ounce can chickpeas, rinsed and drained
1 15-ounce can red kidnet beans, rinsed and drained
1 15-ounce can tomato sauce
1 4-ounce can diced green chile peppers, drained
2 teaspoons chili powder
1 tablespoon cold water
1 1/2 teaspoons corn starch
shredded cheddar cheese (optional)
Step 1:
In a medium bowl stir together flour, cornmeal, baking powder, and salt; set aside. In a small bowl combine egg white, milk, and oil; set aside.
Step 2:
In a 10-inch skillet combine the 3/4 cup water, the onion, and garlic. Bring to boiling; reduce heat. Cover and simmer about 5 mnutes or until tender. Stir in chickpeas, kidney beans, tomato sauce, green chile peppers, and chili powder.
Step 3:
In a small bowl stire the 1 tablespoon cold water into the cornstarch. Stir into the bean mixture. Cook and stir until slightly thickened and bubbly. Reduce heat.
Step 4:
For dumplings, add milk mixture to cornmeal mixture; stil just until combined. Drop dumpling batter from a tablespoon to make 5 mounds on top of the hot bean mixture.
Step 5:
Cover and simmer for 10 to 12 minutes or until a toothpick inserted into the center of a dumpling comes out clean.
Step 6:
To serve, ladle chili into bowls. If desired, top with shredded cheese.

We didn't add the green chiles, and we substituted cannellini beans for the chick peas. Instead of chili powder we used taco seasoning. All in all it was a good meal, although it would be quicker to open a can of vegetarian chili, add a can of baked beans (BBQ or other style), mix over heat, and then add your cornbread muffins, instead of making the chili from scratch. Abby and Zoë really seemed to enjoy this. They gobbled it up without hesitation and requested more and more.

Tofu and Vegetable Stir-Fry
1/2 cup water
2 tablespoons dry sherry
1 tablespoon reduced-sodium soy sauce
1 teaspoon sugar
1/4 of a vegetable bouillon cube, crushed
1 teaspoon grated fresh ginger
Nonstick cooking spray
1 cup thinly sliced carrots
1 clove garlic, minced
3 cups cut-up fresh broccoli
6 ounces extra-firm tofu (fresh bean curd), cubed
1 cup hot cooked brown rice
1 tablespoon sesame seeds, toasted (optional)
Step 1: For sauce, in a bowl stir together the water, sherry, cornstarch, soy sauce, sugar, crushed bouillon, and binger. Set aside.
Step 2: Coat an unheated wok or large skillet with nonstick cooking spray. Preheat over medium-high heat. Add carrots and garlic; stir-fry for 2 minutes. Add broccoli; stir-fry for 3 to 4 minutes more or until vegetables are crisp-tender. Push vegetables from center of wok.
Step 3: Stir sauce; add to center of wok. Cook and stir until thickened and bubbly. Add tofu to wok. Stir all ingredients together to coat with sauce. Cook and stir for 1 minute.
Step 4: To serve, spoon tofu mixture over hot cooked brown rice. If desired, sprinkle with sesame seeds.

I doubled the recipe for the four of us. I also didn't use sherry and added extra vegetables. With the added vegetables we could have used more sauce, but besides that it was a good dish. Abby and Zoë ate this up. Chris, who doesn't typically like tofu, even liked it.

Artichoke and Basil Hero
Start to Finish: 25 minutes Makes: 6 servings
1 cup firmly packed fresh basil leaves
1/2 cup olive oil or salad oil
2 tablespoons grated parmesan cheese
1 tablespoon capers, drained
1 tablespoon white wine vinegar
2 teaspoons Dijon-style mustard
1 clove garlic, quartered
1 16-ounce loaf French bread
1 14-ounce can artichoke hearts, drained and sliced
1 medium tomato, thinly sliced
2 cups torn fresh spinach
Step 1: In a blender container or food processor bowl combine the basil, oil, Parmesan cheese, capers, vinegar, mustard, and garlic. Cover; blend or process until nearly smooth. Set aside.
Step 2: Cut bread in half lengthwise. Hollow out each half, leaving a 1/2 to 1-inch shell. (Reserve bread crumbs for another use.) Spread the basil mixture over the cut side of each bread half. On the bottom half, layer artichoke hearts, cheese, tomato, and spinach. Cover with bread top.
Step 3: To serve, cut sandwich crosswise into 6 pieces.

I decided to change some things in this sandwich. I used mediteranian pane loaf, sliced at the grocery store bakery, bread loaf style. I didn't add parmesan cheese, or capers. I used balsamic vinegar in place of the white wine vinegar. I also used mozzarella instead of the provolone. After I assembled the sandwiches, I grilled them panini style on our countertop grill. This turned out to be really tasty. Abby and Zoë liked the basil mixture, and even tried the artichoke hearts.

Pasta with Vegetarian Sauce Bolognese
8 ounces dried pasta

Step 1: Cook pasta according to package directions. Meanwhile, in a medium saucepan cook carrot, celery, onion, dried oregano, and pepper in 1 tablespoon hot olive oil over medium-high heat until onion is tender. Add garlic; cook for 1 minute more. Stir in the cereal. Add the undrained tomatoes, tomato sauce, and desired amount of the water. Bring to boiling; reduce heat. Cover and simmer for 5 to 10 minutes or until desired consistency.
Step 2: To serve, drain pasta. Toss with 1 tablespoon olive oil. Divide the pasta among 4 dinner plates. Spoon sauce over pasta. If desired, sprinkle with Parmesan or Romano cheese and garnish with oregano sprigs.

The grape nuts cereal really added a nice texture to the sauce. It's important to make sure that it is simmered long enough for the cereal to absorb some of the liquid and become soft, unless you like crunchy pasta sauce that is.

Southwestern Black Bean Cakes With Guacamole
1/2 of a medium avocado, seeded and peeled
1 tablespoon lime juice
Salt
Ground black pepper
2 slices whole wheat bread, torn
3 tablespoons fresh cilantro leaves
2 cloves garlic
1 15-ounce can black beans, rinsed and drained
1 canned chipotle pepper in adobo sauce
1 to 2 teaspoons adobo sauce
1 teaspoon ground cumin
1 beaten egg
1 small plum tomato, chopped
Step 1: For guacamole, in a small bowl mash the avocado. Stir in lime juice; season to taste with salt and black pepper. Cover surface with plastic wrap and chill in the refrigerator until ready to serve.
Step 2: Place torn bread in a food processor bowl or blender container. Cover and process or blend until bread resembles coarse crumbs. Transfer bread crumbs to a large bowl; set aside.
Step 3: Place cilantro and garlic in the food processor bowl or blender container. Cover and process or blend until finely chopped. Add the beans, chipotle pepper, adobo sauce, and cumin. Cover and process or blend until bread resembles coarse crumbs. Transfer bread crumbs to a large bowl; set aside.
Step 4: Lightly grease the rack of an uncovered grill. Place patties on the rack. Grill directly over medium coals for 8 to 10 minutes or until patties are heated through, turning once halfway through grilling.
Step 5: To serve, top patties with guacamole and tomato.

These "cakes", which are supposed to be like burgers, were pretty good. They were a little lacking in taste, but that is mostly because I forgot to get cilantro and therefore had to leave it out. I also didn't use a chipotle pepper, and I used adobo seasoning instead of sauce. Next time around I would probably still leave out the pepper, but add in chopped onions. We melted some monterey-jack cheese on top and put salsa along with the guacamole. This bumped up the flavor, in place of my missing cilantro. Abby took to the cakes right away and ate about half a patty. Zoë took to them slowly, but picked up her pace after she saw Abby getting seconds.

Creamy Carrot and Pasta Soup
Two 14-ounce cans vegetable broth or chicken broth
2 cups sliced carrots
1 large potato, peeled and diced
1 cup chopped onion
1 tablespoon grated fresh ginger
1/2 to 1 teaspoon Jamaican jerk seasoning
8 ounces dried radiatore or rotini
11/2 cups milk or one 12-ounce can evaporated fat-free milk
Fresh chives (optional)
Step 1 In a large saucepan combine broth, carrots, potato, onion, ginger, and Jamaican jerk seasoning. Bring to boiling; reduce heat. Cover and simmer for 15 to 20 minutes or until vegetables are very tender. Cool Slightly.
Step 2 Meanwhile, cook pasta according to package directions. Drain.
Step 3 Place one-fourth of the vegetable mixture in a food processor bowl. (or blender) Cover and process until smooth. Transfer vegetable mixture to a bowl. Repeat 3 times more. Return all to saucepan. Stir in pasta and milk; heat through. Ladle soup into bowls. If desired, top with chives.

This soup turned out to be quite tasty, even before I blended it and added the milk. Abby and Zoë liked to eat the pasta out of the dish, but only let me feed them a few spoonfuls of the soup. I didn't add the Jamaican Jerk Seasoning, as I feared it would be too spicy for the girls. I used a can of evaporated milk, not the fat free variety. I think this also would have been good with some celery added, but thought of it too late into the process.

Grilled Salmon with Olive Tomato Vinaigrette
1 can (3 ounces) green olives stuffed with pimentos, drained and sliced
1/4 cup canned tomato paste
1/4 cup extra-virgin olive oil
1/4 cup red wine vinegar
1/4 cup lemon juice
1/4 cup water
3 pounds salmon fillet, with skin
2 teaspoons Italian (oregano and basil) seasoning
Nonstick spray olive oil
Mix the olives, tomato paste, olive oil, wine vinegar, lemon juice and water. Set aside; store in the refrigerator if kept longer than 4 hours.
Heat a grill to high. Season the flesh-side of the salmon with the seasoning and spray liberally with oil. Spray the rack of the grill with oil and grill the fish flesh-side down until browned, about 5 minutes. Flip with a wide long-handles spatula and grill until the fish flakes to gentle pressure. Depending on the thickness of the fillet this will take any where from 5 to 10 minutes more.
Slip the spatula between the skin and the flesh. Lift the fish onto a cutting board or serving platter; the skin will stick to the grill (it can be scraped off later). Spoon the olive sauce over the salmon and serve.

We cut the recipe in half. We bought 3 Norwegian salmon steaks, without the skin, just enough for the four of us, about 1.25 pounds. We used our countertop grill, and seasoned both sides of the fish with olive oil, italian seasonings, salt and pepper. This vinaigrette sauce tasted good and complemented the salmon well. Althoug next time we do this recipe we will omitt the green olives, and try blending the black olives in order to make it more of a paste rather than a dressing. The girls ate it right up. They enjoyed the olives the most.

It was cold and wet .The girls enjoyed looking at the fish and pushing the buttons that told you about the diffwerent all about the fish. Upstairs they climbed a fish ladder. We all had a good time.
